Spicy Hoisin Chicken Stir-Fry

chicken_stir_fryOur second meal on the Blue Apron plan was Spicy Hoisin Chicken Stir Fry w/ Baby Bok Choy and Sesame-Ginger Cucumber Salad.  Even after sitting in the refrigerator for four days, all the ingredients were still fresh and crisp.

To the right is a picture of the ingredients included in this meal.  Aside from the juice in chicken packaging leaking out a little bit, I’m impressed by the efficiency with which the food is delivered and preserved.  I was even more impressed with the effort this recipe took to overlook the typical, passable and 3-ingredient “chicken stir-fry” for something more flavorful and satisfying.  I would eat this again in a heartbeat.
