Summer Pepper & Potato Shakshuka with Pea Shoots and Spiced Pita Chips

Tonight’s summer pepper and potato shakshuka was another unexpectedly delicious experience. The dish resembled what I’ve seen described as a garden hash, and would turn out to probably be a great breakfast dish as well as dinner.  Here’s tonight’s metrics:

Prep time: 15 mins (actual: 20 mins)

Cook time: 35 – 45 mins (actual: 37 mins)

The meal is meant to be shared in a single dish, using the pita chips to scoop up the shakshuka.  Not being a vegetarian, I was surprised how much I enjoyed this dinner.  It was filling and flavorful without being extreme, and definitely a nod in the direction of vegetarian cuisine.  Here are a few things we needed for preparation:
