Basque-Style Cod with Sweet Pepper-Tomato Sauce and Freekeh

Today’s dinner is Basque-Style Cod with Sweet Pepper-Tomato Sauce and Freekeh.  It sounds delicious, and I’m not all that familiar with cod outside the basic, universal fish-and-chip.  Unfortunately the garlic didn’t arrive with the rest of the ingredients, but we had some on hand so we’ll still get an accurate feel for the dish in its entirety.
