Tonight’s dish of Summer Udon Noodle Salad was both filling and fresh – definitely perfect for a summer night. At this point I’m no longer surprised to see myself eating unprecedented amounts of vegetables and genuinely enjoying the flavor and texture. Unfortunately we didn’t get an accurate measure on prep or cooking times, so we’ll omit those observations for this post.
I’ve always liked Udon noodles, but I’ve never been a huge fan of tomatoes of any kind so I was a bit skeptical that I’d like this noodle salad.
“Noodle salad” is something I can say with 100% certainty I’ve never ordered at a restaurant. And while I still probably never will, I could easily be persuaded into making this dish again at home.
